ABSTRACT
Ghee is a class of clarified butter that originated in the Indus valley. It is commonly used in cuisine of the Indian subcontinent, also used in traditional medicine or also for religious purposes. Ghee comes from clarified milk .It is used in AYURVEDA as a therapeutic agent. Ghee is a unique type of fat by its characteristic flavor or its properties. Ghee has been accepted universally as superior fat to others. Ghee is believed to be a coolant , capable of increasing mental power , physical appearance , curative of ulcers and eye diseases also . Ghee is also a health booster and good for mental health .Ghee has a great effect on the nervous system . It improves memory and strengthens the brain. INTRODUCTION AND PREPARATION OF GHEE
Ghee , the golden elixir of AYURVEDA, is an oil with a long and interesting history. Ghee, In hindi ghee also spelled ghi , and in Sanskrit ghrita or ghruta . It is a clarified butter, and a staple food on the Indian subcontinent. Ghee is mostly also used as a cooking oil in india .Ghee is used in every numerous religious ceremonies the thindu observe in their lives, including birth , wedding sacrifices and also gift-giving at death .Ghee is typically prepared by simmering butter which is churned from top most layer of cream then pouring and retaining the clear liquid fat while discarding the solid residue that settled to the bottom .The color texture and taste of ghee depend on the quality of the butter and also depend on the duration of boiling time . Desi ghee is the traditional Indian ghee made from cow’s milk.
THERE ARE THREE COMMON METHODS FOR PREPARATION OF GHEE
MILK BUTTER – Sour raw milk is churned into the butter. The butter boiled in an open container or pan to allow the water to evaporate the hot ghee is transferred .
CREAM BUTTER – Milk is separated into cream which is then into butter and then it goes to heat clarification process to produce the ghee.
DIRECT CREAM – Fresh cream is directly converted to the ghee . This method also requires a long heating time for this process

Ghee is composed almost entirely of fat 62% of which consists of saturated fats. it is also rich in oxidized cholesterol. it has negligible amounts of lactose and casein. in these there are omega ( 3,6,9,)fatty acids that are also present in ghee as a part of a balanced diet can help reduce unhealthy cholesterol levels. ghee increases the good cholesterol hdl level in the body. Ghee is rich in omega-3-fatty acids that support the cardiovascular system of our body.

It is best to take ghee for the balance of pitta dosha. Cow is known as amritam in ayurveda. In facial therapy, cow ghee is introduced in NOSTRILS through nasya karma in PANCHKARMA. It is also used in the snehan karma (purva karma) in panchkarma . It increases OJAS and SATTVIC GUNA in the body.

PRODUCTS DESCRIPTION
1. BRAHMI GHRIT
In brahmi ghrit there is brahmi ( bacopa monnieri) , vacha ( acorus calamus) .shankhpushpi (convolvulus prostratus) and other ingredients are in it. Brahmi ghrit is classical prepared by ayurvedic principles. This formulation helps in improving intelligence and learning skills. It provides nourishment to the body and acts as a rasayana.
Dosage– 1 tsp twice daily
3. ASHWAGANDHA GHRIT
In ashwagandha ghrita there is Ashwagandha (Withania somnifera) vibhitaki (terminalia bellirica) and other ingredients. It provides nourishment to the brain cells and strengthens the immunity. It acts as a rasayana.
Dosage– 1 tsp twice daily
3. SHATAVARI GHRIT
In shatavari ghrit there is shatavari (Asparagus racemosus) jeevak (Malaxis acuminata), kakoli (roscoea purpurea) mudgaparni (Vigna trilobata) and many other ingredients are in this. It is mostly used in females. It strengthens the body and supports hormonal balance. It also provides nourishment to the body and strengthens the reproductive system.
Dosage– 1 tsp twice daily
4. SHATA DHAUTA GHRIT
It is used in skin problems like dark spots and cracks in the hand or feet. It is also used in fungal infections it is also used in THE THERAPIES OF PANCHKARMA. It is in the form of cream.
Dosage– 1 tsp twice daily
